Jamaican Style Chicken

Marinade

1/3 cup chopped green onions

¼ cup lime juice

2 tbsp olive oil

2 tbsp reduced sodium soy sauce

1 tbsp ginger(grated) or 1 tbsp powder

2 tbsp honey



2 tsp minced garlic

2 tsp allspice

1 tsp each thyme, salt and pepper

½ tsp each nutmeg & cinnamon


Place marinade and boneless, skinless chicken thighs in airtight container or ziplock bag.

Marinade 12 hours or overnight.

Grill thighs on BBQ or bake in oven on a parchment lined baking sheet @ 375 F until cooked.


Top with Fruit Salsa:

1 cup diced pineapple

¼ cup each red onion, red pepper, green pepper

1 tbsp lime juice

1tsp sugar

¼ tsp salt


Combine all ingredients. Enjoy!
